Salt Lake City is home to quite a few iconic businesses that have been around for decades. And an important player is Lamb's Grill on Main Street. Now under new management, they're quickly approaching their 100th anniversary.

Owner Francis Liong is working to take the restaurant to the next level. Since taking over Lamb's Grill, he's worked hard to revitalize the restaurant, changing the menu and updating it to attract an even larger crowd. It's open for breakfast, lunch and dinner daily.... Folks who visit love the Eggs Benedict, served with Canadian bacon, along with smoked salmon with spinach.... His coffee is brewed from locally-roasted beans, and the daily fish special is also popular.

Even though Francis has only owned the iconic Salt Lake City restaurant for two years, he brings an established and successful pedigree to the place.... He grew up in the restaurant business in Los Angeles, helping run his family's coffee shop from the time he was a small child.... Later, he was running the top restaurant in Beverly Hills... But soon it came time to be closer to his wife's family, and so he headed for Utah. Purchasing Lamb's Grill was the perfect opportunity to get him back into the business.

Understanding that his lunch crowd is comprised of many business people, Francis prides himself on his fast ticket time at Lamb's Grill, with a turnaround faster than most fast food.... The cooked-to-order dishes are ready within 15 minutes, so you can be in and out over an hour lunch break.

Right now competition is fierce with everyone gearing up for the Performing Arts Center, which will open in the next three to four years.... There's five new restaurants opening on Main Street alone, but Francis says this is good news, as more quality eateries only improve the dining scene.... Neumont University also moved their campus next door, and he says that's been a great benefit for his business.

The Lamb's Grill staff now includes 25 employees, adding to Utah's consistent low unemployment rate.
