This is Fred Ball for Zions Bank, speaking on business.

It seems we suddenly have an influx of upscale steak houses in the Salt Lake City area. Spencer's at the Hilton has a large and loyal following. Don Shula's in the Wyndam Hotel was an immediate hit. Now, Fleming's Prime Steakhouse and Wine Bar has opened in the Gateway in Downtown Salt Lake to rave reviews.

I have been to Fleming's on three separate occasions and each time have been wowed. The atmosphere is exceptional. The ambiance and décor really lend themselves to a true first-class dining experience and the hostess and wait staff is attentive and efficient. But the real plus about this establishment is the quality, preparation and presentation of the cuisine.

I talked to Michael Silver, the operating partner of Fleming's. He told me how the organization got started with their first property in Newport Beach, California. Success was immediate and now there are Fleming's Prime Steakhouse's throughout California and with outlets in Seattle, Tampa, Virginia, Las Vegas, Boston, Dallas, Nashville, Baltimore and Salt Lake City.

The owner is Paul Fleming, who has a great track record in starting very successful restaurant organizations. His initials, P. F. are the initials of the very popular P. F. Changs Chinese chain that is so very popular in our community and throughout the country. He also started Z’Tejas southwest cuisine that is also located in the Gateway.

Let me warn you about the size of portions at Fleming's. All side dishes are Ala Carte and believe me that are very, very sizable. I recently ordered a side of creamed spinach and Joyce ordered some French fry's. Each order would have served at least four people. Split the side orders but don't pass them by. They are really delicious.

The entrees are generous in size and absolutely delicious in taste. Michael told me that all beef, lamb, chicken and seafood items are of the very best quality that is available. The chefs and kitchen staff are truly great in making sure items are cooked to the exact specifications of the customer. "Medium rare" at Fleming's really comes to you "medium rare."

Fleming's has complicated my life. It is another favorite and makes my decision of "where do I eat tonight," just a little bit more complicated.
