Hummus Chicken Wrap with Baked Sweet Potato Fries Grilled Chicken Wrap: Ingredients: 5 raw boneless chicken breasts 1 lb. egg plant, peeled and sliced 1 1/2 tsp Mrs. Dash Seasoning 1 1/4 C Tomato, diced 1 1/2 Tbsp Kalamata Olives, pitted and chopped 1/4 C Lemon juice 1/4 C fresh Italian parsley, chopped 1/4 C fresh Basil, chopped 5 Pita Bread 3 Tbsp Hummus 10 Green Leaf Lettuce leaves Directions: Preheat oven to 320F; place the chicken breasts on a sheet pan sprayed with non-stick cooking spray. Bake for 13 mintues, or until an internal temperature of 165F is reached; cool chicken, slice. In a pan, spray non-stick spray and cooking eggplant over medium heat. Season with Mrs. Dash; cool. In a bowl, toss tomatoes and olives with lemon juice, parsley and basil. Baked Sweet Potato Fries: Ingredients: 3/4 tsp paprika 1 1/4 tsp granulated garlic 1 1/4 tsp black pepper 1 1/4 tsp brown sugarv 1/8 tsp ground cinnamon 1 lb. sweet potatoes, cut into strips 2 1/2 tsp Olive oil Ingredients: Preheat oven to 375F. In a bowl, combine spices. Season fries with spice mixture; toss with oil to coat. On a sheet pan lined with parchment paper, spread potatoes in a single layer. Bake until tender and golden brown, about 20 minutes. Plate Assembly: Spread 2 teaspoons of hummus on pita bread. Add 2 lettuce leaves, 3 eggplant slices, 1 sliced grilled chicken breast, 1/4 cup tomato/olive mixture. Fold pita over, serve with baked sweet potato fries. Garnish with fresh parsley.
